Teriyaki Chicken Rice Bowl (Soy-Mirin-Honey Glaze, Sesame, Broccoli, 30 Min)

This is the bowl I crave the second I see the word “takeout” on my phone — and now I make it at home in 30 minutes for half the cost. Teriyaki chicken rice bowl is the Japanese-American weeknight dinner reborn from your own kitchen: boneless chicken thighs seared golden, then glazed in a glossy reduction of soy sauce, mirin, honey, ginger, and garlic until every piece is lacquered and shiny, served over fluffy jasmine rice with vivid steamed broccoli, toasted sesame seeds, and sliced scallions.

Fun fact: the word “teriyaki” literally means “shine-grill” in Japanese — “teri” refers to the lustrous sheen the sauce gives the cooked meat, and “yaki” means grilled or broiled. Traditional teriyaki uses only four ingredients (soy, sake, mirin, sugar) and was originally a method for cooking fatty fish like yellowtail. For the chicken

  • 1.5 lb boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp neutral oil (avocado or canola)
  • 1/2 tsp salt + 1/4 tsp black pepper

For the teriyaki glaze

  • 1/3 cup low-sodium soy sauce
  • 3 tbsp mirin (Japanese rice wine)
  • 3 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • 1 tsp toasted sesame oil
  • 1 tbsp cornstarch + 2 tbsp water (slurry)

For serving

  • 3 cups cooked jasmine rice (1 cup dry)
  • 2 cups broccoli florets, steamed 3-4 min
  • 2 scallions, thinly sliced
  • 1 tbsp toasted sesame seeds
  • Optional: lime wedges, chili flakes, pickled ginger

Smart substitutions

  • No mirin: Sub 3 tbsp dry white wine + 1 tsp sugar (or sake + sugar)
  • Gluten-free: Use tamari or coconut aminos instead of soy sauce
  • Lower sugar: Reduce honey to 1 tbsp and skip brown sugar
  • Different veg: Sub snap peas, asparagus, bok choy, or carrots for broccoli

Step 1: Cook the rice

Rinse 1 cup jasmine rice under cold water until water runs clear. Combine with 1 1/2 cups water in a saucepan, bring to a boil, reduce to lowest heat, cover and simmer 15 minutes. Rest covered 10 minutes off heat, then fluff with a fork.

Step 2: Mix the teriyaki glaze

In a bowl, whisk soy sauce, mirin, honey, brown sugar, rice vinegar, ginger, garlic, and sesame oil. Whisk cornstarch with 2 tbsp cold water in a small cup; set aside separately.

Step 3: Sear the chicken

Pat chicken dry; season with salt and pepper. Heat oil in a large skillet over medium-high until shimmering. Add chicken in a single layer (work in 2 batches if needed). Sear undisturbed 3 minutes for a deep golden crust, flip, cook 2-3 minutes more until just cooked through.

Step 4: Add the glaze

Reduce heat to medium. Pour the glaze mixture over the chicken; toss to coat. Simmer 2 minutes for flavors to meld.

Step 5: Thicken to lacquer

Re-whisk the cornstarch slurry, then drizzle into the pan while stirring. Simmer 1-2 minutes more until the sauce thickens to a glossy, spoon-coating glaze that clings to every chicken piece.

Step 6: Assemble the bowls

Divide rice between 4 bowls. Pile glazed chicken on top, add steamed broccoli on the side. Drizzle any extra pan sauce over everything. Shower with toasted sesame seeds and sliced scallions. Serve immediately with lime wedges.

Pro tips for the best teriyaki bowl

  • Pat chicken bone dry. Moisture is the enemy of a good sear. Paper towels for 30 seconds = caramelized crust instead of steamed gray meat.
  • Don’t crowd the pan. Chicken should sizzle loudly. If it goes silent, you’ve crowded the pan and it’s now steaming. Sear in 2 batches.
  • Slurry goes in LAST. Adding cornstarch too early makes it taste raw and gluey. Add only after the glaze has simmered and you’re 1 minute from serving.
  • Steam broccoli separately, briefly. 3-4 minutes max for crisp-tender vivid green. Cooking it in the sauce turns it gray and limp.

Can I make this in a sheet pan?
